The 2015 Edna Valley Sauvignon Blanc is made from Sauvignon Blanc grapes grown in a variety of vineyard blocks in the Paragon Vineyard. The grapes are left on the vine as long as possible to develop citrus and tropical fruit characters. The handpicked clusters were pressed directly with minimal pressure. To increase viscosity and complexity, 15% of the wine was barrel fermented in older French barrels and aged on the lees for four months before blending. A variety of specialty yeasts were used to bring grapefruit, orange, and tropical flavors to this wines forefront. The wine is well balanced with citrus and tropical fruit flavors, showing undertones of wet stone and fresh cut grass. Lively acidity makes the wine crips and ands length and minerality to the finish.
